And now... well, now we're a tad bit dramatic in our enthusiasm of these miniature powerhouses. Microgreens are splendid little things, and if you're curious about them then keep on reading~!
It might surprise you to find out that a 'microgreen' is simply the name for a young plant. Just past being a sprout, the microgreen phase is soon after germination, meaning that much of the seed's stored energy is concentrated in this form. So don't let their little size fool you...! These tiny plants actually contain greater nutritional concentrations than their adult-counterparts. For that reason and more, they're now considered a superfood and are gaining popularity among athletes, nutritionists, and those looking to incorporate healthier choices into their lifestyle. With microgreens, less is literally more!
Several studies have shown that a small serving of microgreens can equate up to 40% more compounds and phytonutrients than a fully-grown plant, making it easier and more convenient to maintain one's wellbeing. And if that wasn't convincing enough, microgreens are also noted for their intense flavors,
vivid colors, and crisp textures, which turn them into a fun and delicious addition to all types of
meals. I know that's a lot of information to chew on (har har), but there's no time like the

Middle Earth Microgreens was founded in 2023 by the father-daughter duo of Sarah and Ken Hettinger. Quite the pair, Sarah and Ken have gone on many journeys together, from road-tripping to hike in National Parks, to performing as craft beer judges at competitions, to working
together on active construction sites; they both have a sense of adventure
and camaraderie that's only strengthened with time
Back in 1968, well before Sarah was even a consideration, Ken opened the Middle Earth Organic Food Co. in Pelham, NY. It provided some of the first certified organic produce from California and was an early version of zero-waste stores, where one could buy items in bulk and bring their own containers. This piece of family history is the inspiration behind the current business
name, and they hope to do it justice in their new pursuits
Until recently, Sarah worked for the New York Botanical Garden as a Landscape Project Manager and Land Surveyor. Through these roles she not only helped design and oversee many of the biophilic gardens found throughout
the grounds, but she also discovered and embraced the delicate balance
between curated landscapes and the natural order of the plant world.
Becoming an urban farmer was the natural next step in her journey
